The modern classic style produces menus running from pan-fried scallops
with a mixed herb and Parmesan salad to sautéed loin of lamb in
an olive and thyme jus with roasted provecale vegetables. The assiette
of desserts gets a standing ovation, especially the chocolate fondant.
